Campfire triple chocolate jaffa muffins

Somebody suggested the idea of making a cake in an orange so I thought I’d test it out on a canoeing trip down the Nymboida river. It was a little involved but everyone said how great the muffins tasted I think it’s worth sharing.

It’s fairly straightforward to make these delicious orangey-chocolaty treats:

  1. Slice the head off of 4 orange like you would a boiled egg.
  2. Scoop out the internal flesh – this can be set aside for eating or drinking separately.
  3. Prepare a triple chocolate muffin mix as per the directions on the packet
  4. Spoon the muffin mixture into the hollowed out oranges and replace the ‘lids’
  5. Wrap in tin foil and place over hot coals, turning occasionally, for 30-45 minutes (until the centre is cooked)
  6. Remove the oranges from the fire and the foil from the oranges. Cut the oranges in half and scoop out the muffin with a spoon.
